Tasajo sounds so exotic, but in fact this appetizers is beef jerky! In order to prepare this appetizer, you need to give the beef jerky a good overnight soaking and then pour out the remaining water. Once you have finished soaking the beef jerky you need to extract as much salt out of the meat as possible. You do this by boiling the beef jerky for approximately one hour. Change the water, and boil again. Keep doing this process until such time as the beef jerky becomes soft enough that you can pull apart the meat into strands. Having reached this stage, you then need to put the beef jerky on a board of some kind and smash the beef into threads. Either at the same time, or after, get the lard/butter to saute the garlic, oregano and onion until you see that the onion is tender. Use a green pepper, onion, tomatoes and tomato sauce to make a crillo sauce (or cheat and buy a bottle of crillo sauce) and then add the beef jerky to the sauted onions and other ingredients. Cook this until you see that the beef has changed color and is showing a brown look – add the crillo sauce and some wine and cook for a further 5 minutes.
After you have completed this process, you’ll have yourself a Tasajo appetizer!
