Stuffed Avocados

INGREDIENTS (should serve 8)

* 4 avocados

* 1Ib lobster meat (precooked)

* 4 red pimientos (canned)

* 8 green olives

* ½ cup of mayonnaise

* 2 tablespoons of olive oil

* 1 tablespoon each of vinegar and salt

* ¼ tablespoon each of paprika and black pepper

 

PREPARATION

Almost everyone loves avocados, and chefs love to prepare avocado dishes because they are so easy in their preparation. Cuban stuffed avocados are no different in this respect. All you need to do is to either peel you avocado and then cut it in half, or cut the avocado in half and then peel it. After you have done that, mix together some vinegar, oil, paprika, salt and pepper - then marinate the avocado(s) in the mixture. Place these into your fridge whilst you cut a lobster into small cubes. Add mayonnaise to the lobster cubes and mix well. Take the avocados out of the fridge and fill in their middle with the lobster/mayonnaise mixture. Put a couple of olives and pimentos on top and serve over cold ice-burg lettuce leaves.
