INGREDIENTS (8 potions)
* 8 potatoes
* 2 tablespoons of parsley
* 1 tablespoon of olive oil
* 1 onion
* salt and pepper for taste
PREPARATION
Preparing a dish of Cuban crushed potatoes is a wise choice if you are either vegetarian yourself, or think you may have some vegetarians among your dinner guests. They’re fairly simple to prepare. All you need do is find a medium size saucepan into which you put some potatoes and add water. You may want to add some salt, before boiling for approximately ten to fifteen minutes. Whilst you do this, you need to preheat you broiler and line a baking sheet with non-stick cooking spray. You then need to take your potatoes, by now nice and tender, and crush each of them one at a time between two paper towels using the palm of your hand. Put the crushed potato on the preheated baking sheet, brush the top with oil, and broil until the tops are brown and crusty. Sprinkle some onions and parsley on top. Serve. – actually, these also make a very good choice as an appetizer.
