INGREDIENTS (should serve Serves 6)
1 lb. codfish
1 lb. potatoes
3 cloves garlic
1 large onion
1 green pepper
1 can/bottle of tomato sauce
1 can of red peppers
1 teaspoon of vinegar
1/3 of a cup each of oil, water and cooking wine (dry)
PREPARATION
Another of those Cuban recipes that is going to take you two days to prepare. On day one you need to soak your codfish. On day two, you change the water that your codfish has been soaking in overnight and boil the codfish until it becomes tender. After that you separate the fish into large chunks/pieces. Take a shallow casserole bowl and place some potatoes in the bottom. Cover the potatoes with the chunks of fish, some onion rings, water, cooking wine, crushed garlic, red and green peppers (preferably ground and with their juices), and some tomato sauce. Let the contents of the casserole simmer on a medium heat until the potatoes have cooked and then garnish with some red peppers and fried bread. Serve. Great stuff!
