INGREDIENTS (serves 4-8 depending on size of pig)
* Pork meat (up to 1/2 pig)
* 3 cloves of garlic
* 2 cups each of water and rice
* 1 each of an onion, green pepper,
* 1 can each of tomato sauce, red peppers and petit pois
* 1 cup of dry wine
* 1 tablespoon of salt
* 1/4 teaspoon of pepper
PREPARATION
This dish is very easy to prepare and makes for a good introduction to cooking Cuban food. Simply cut the pork into 2 inch pieces by separating the fat from the meat; finely chop the fat and fry. Remove the crackling and fry in garlic until golden brown. At the same time, fry the pork meat and once it turns brown, add in the chopped onions, green peppers and the juice from the peas. Let the contents boils while you wash the rice. Add rice and let the contents cool until they start to turn dry. Finish off by cooking in an oven at 300 degrees Fahrenheit. Serve (with garnish if you want).
