INGREDIENTS (should serve 4 - 6)
* 3lb chicken
* 6 garlic cloves
* 3 teaspoons of butter
* 2 teaspoons of dry oregano leaves
* ½ teaspoon each of black pepper and cumin
* the juice from 1 squeezed lemon
* the juice from ½ a squeezed orange
PREPARATION
Pollo Asado Cubano is roast chicken by any other name, so preparing this dish should not prove to be too onerous. Basically, you need to get a 3Ib chicken, rinse and pat dry. Put this in foil, breast-up, and place in roasting pan. In a mortar place garlic, salt, oregano and black pepper – to add flavor – and mixed them up well with butter and lemon. Add half of the contents of your mortar between the chicken breast and skin and the other half over the remainder of the chicken. Tuck the chicken wings in under the legs and tie the legs together. Leave this overnight to marinate. Next day, cook the prepared chicken for 40 minutes at 350 degrees Fahrenheit. Take the cover off and cook for a final 5 to 6 minutes at 400 degrees Fahrenheit. Serve.
